I love corn side dishes throughout the year but when it is fresh during the summer it is particularly sweet and tasty. This recipe is easy and is so yummy with irresistible garlic herb butter! Perfect for summer get-togethers and barbecues!
INGREDIENTS
- 6 ears corn, unhusked
- 2 tablespoons chopped fresh parsley leaves
- ½ teaspoon smoked paprika
FOR THE GARLIC HERB BUTTER
- ½ cup unsalted butter, at room temperature
- ¼ cup chopped fresh parsley leaves
- 3 cloves garlic, pressed
- Zest of 1 lemon
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon dried basil
- ½ teaspoon kosher salt
- ¼ teaspoon ground black pepper
- Pinch of cayenne pepper
- Preheat oven to 400 degrees F.
- In a medium bowl, combine butter, parsley, garlic, lemon zest, thyme, rosemary, basil, salt, pepper and cayenne pepper, set aside.
- Place corn husks directly on the oven rack and roast until corn is soft, about 35-40 minutes.
- Peel down husks and spread with butter mixture.
- Serve immediately, garnish with parsley and paprika, if desired.
